Red Mountain Recipe Series - Lomo Saltado by Ninja Bistro

Ninja Bistro Lomo Saltado
1 (16 ounce) bag frozen French fries
1 lb filet mignon
2 tablespoons soy sauce, divided
1 medium red onion
2 plum tomatoes
1 (2 inch) knob of ginger
1 tablespoon white vinegar
1 tablespoon aji amarillo paste
2 tablespoons vegetable oil
Cilantro, for garnish
White Rice, for serving

1. Bake or Fry French fries, set aside once cooked
2. Slice beef into 1/4" think slices and add 1 tablespoon of soy sauce and let marinate
3. Slice onions and tomatoes into 1/4" thick wedges. Remove pulp and seeds of tomato. Chop ginger and cilantro.
4. Whisk 1 tablespoon of soy sauce, white vinegar, and aji amarillo paste together
5. Heat a large non-stick wok over medium heat
6. Add oil and once it shimmers, add beef and cook about 2 minutes until brown
7. Remove beef to plate and set aside
8. Add onions and stir fry until soft, about 3 minutes
9. Add ginger and stir fry for 1 minute more
10. Return beef to pan along with tomatoes, and stir frequently
11. Stir in soy sauce aji mixture and toss to combine. Add cooked French fries and stir all together.
12. Serve on a plate with a side white rice and cilantro to garnish.
